In the Maurach kitesurfing spot you will be able to find flat and choppy water with thermal wind, although the water and air temperature is on the colder side.
The stretch of the year where you can kite here is a long one, from March to October, although you will have to be careful of beach goers in the hotter months, as it can get crowded. There are several other hazards in the spot such as ship traffic and buoys to be mindful about.
